Sweet Potato Pie

Pastry for one 9-inch pie crust
2 cups hot, cooked, mashed sweet potatoes (about 2 medium-size sweet potatoes)
3/4 cup sugar
1 tablespoon all-purpose flour
1 teaspoon baking powder
1/2 teaspoon nutmeg
1/4 cup butter or margarine
1 egg, beaten
1 tablespoon lemon juice
1 teaspoon vanilla extract
1-1/4 cups evaporated milk or regular milk

Heat oven to 425°F. Prepare pastry. Cover edges of pastry with aluminum foil to keep from burning. Combine sugar, flour, baking powder and nutmeg in a medium mixing bowl or blender (Whaley uses her blender). Add remaining ingredients and mix until well blended.
Pour filling into pastry and place pastry-lined pie plate in oven. Bake 15 minutes and reduce oven temperature to 350°F. Bake until knife inserted in center comes out clean, about 45 more minutes.
Makes 1 pie to serve 6-8 people.
