Watermelon Ice

3/4 cup water
2/3 cup sugar
4 cups watermelon, mashed, seeded
1/2 cup fresh lemon juice (not concentrate)

Mix water and sugar in saucepan and bring to a boil for 3-4 minutes. Remove from heat and cool. Liquefy watermelon pulp in a blender and add lemon juice and sugar mixture; mix thoroughly. Pour mixture into a metal bowl and freeze until a rim of ice forms around the edge of bowl (around 3 hours). Thoroughly mix again and return to freezer until firm but not rock hard. Serves 4
